Welcome back to the tasting block! As we kick off October (this week's tasting starts 1/10), we are heading straight to Spain. When it comes to Spanish cheese, Manchego often gets all the spotlight. But this week, we are showcasing a true Spanish secret that takes the art of cheesemaking to a whole new level.
If you love a cheese with depth, complexity and a fantastic backstory for your next grazing board, you are going to absolutely adore our feature cheese this week.
Los Cameros Mezcla Curado: The Ultimate Aged Three Milk Blend
Why settle for one type of milk when you can have three? "Mezcla" translates directly to "mixture", and this extraordinary cheese is a brilliant masterclass in blending.
Hailing from the Rioja region in Spain, the cheesemakers at Los Cameros carefully combine cow, sheep and goat's milk to create a flavour profile that no single milk could achieve on its own. It is all about balance. The cow's milk provides a beautifully smooth and creamy foundation. The sheep's milk adds a rich, buttery sweetness and depth. Finally, a touch of goat's milk brings a bright, aromatic tang to tie the whole wheel together.
Aged for a minimum of six months (which earns it the "Curado" title), this cheese develops a beautiful natural rind that is traditionally rubbed with olive oil during the maturation process. It is a genuine labour of love, and you can taste the dedication in every single bite.
Tasting Notes:
-
Texture: Firm and dense with a deeply satisfying bite. It has a slight crumbliness but turns wonderfully creamy on the palate.
-
Flavour Profile: Rich, savoury and incredibly nutty. You will taste toasted almonds, browned butter and a gentle, lingering tang at the finish that keeps you coming back for another piece.
-
Pairing: To really channel those Spanish vibes, serve this with a generous wedge of quince paste (membrillo) and a handful of salted Marcona almonds. For wine, you cannot go wrong with a medium-bodied Tempranillo or even a crisp, cold lager.
