Cured for a minimum of 20 months, it is produced by Julian Martin (Julián Martín), a family business located in Guijuelo (Salamanca). Pioneers in the Iberian Jamon industry, dedicated exclusively to the production of Acorn-fed Hams and Acorn-fed Shoulders since 1933.
