This stunning example of a hand made artisan Roquefort is made by the Carles family dairy, one of the smallest and most respected of the remaining Roquefort producers.
Considered the best Roquefort you can find, it is entirely handmade in a small purpose built dairy using old school methods passed down through generations of the Carles family. The blue mould’s penicillin is cultivated in rye breads made on site and all the cheeses are matured in caves where the blue mould spreads naturally. The atmosphere of these unique caves is naturally cooled by fissures running beneath the crypt of the village church, and they contain three levels of ancient oak shelving dating back centuries. Their role in maturation is critical, and Carles are now the only producer to individually stack young cheese the old-fashioned way to ripen directly on the wood, rather than on plastic or in crates.
The flavour of this cheese is bold, sharp & spicy, giving way to a creamier, sweeter finish. Soft and supple, Carles Roquefort is crying out to be put on a baguette with a fig or two.
