Fourme d'Ambert AOC

Region:       Auvergne, France
Milk Type:  Pasteurised Cows

Fourme d'Ambert is one of France's oldest cheeses. Made from cow's milk, its production dates from the Roman occupation of France. Each wheel of this lovely little Frenchie is formed from unpressed curds inoculated with a less spicy blue mold than that of its cousin, Roquefort. Named after the town of Ambert in the region of Auvergne, it is made in a unique cylinder shape, which gives it a distinctive shape on cheeseboards.

This is a great "beginners" blue cheese and might even entice the non blue eaters with  its lovely mild blue flavours. It has a dense creamy texture & velvety mouthfeel full of sweet cream & butter that complement the gentle spicy earthy flavours.
