This half-cooked whole duck foie gras lobe is a plain foie gras, cooked at a low temperature, which brings out its authentic flavours. Jean Larnaudie selects each liver manually to provide you with the most suitable liver for your recipe. It can be lightly sautéed or you can enjoy it cold.

• Seared: Quick-seared, served as appetiser or main dish, often with fruit compotes.

Serve with accompaniments such as caramelised onions, apple/pear slices, fig jam, green salad with vinaigrette and pair Foie Gras with Sweet wines like Sauternes, late-harvest Rieslings, dry Champagne, or robust reds.
